Instead of removing building polygons, I add a demolished=* tag. Would be nice if such data are not rendered in the map. Or some kind of different rendering.

Demolished = gone = no longer building=yes. Why would you negate such a clean concept with another tag?
Best you could do is set building=no, if you're really inclined to keep an object in the db. Then it doesn't even matter whether you set demolished=yes (as meta information) or not, and =no is a known concept to data users.
