It would be useful for the background layers url to have the option to set the list of subdomains to use in a similar manner to OpenLayers and other js slippy map libraries.

Fixed. You can now tell P2 to alternate between (say) a, b and c by adding the string ${a|b|c} to the URL. See the default imagery.xml for an example.
