When viewing ways that represent coasts (coastline, natural=water, riverbank, others?), show them not with the gray line but with two lines colored depending on the ways direction. When editing such a line replace one half of the yellow highlight by blue.

If the two-line approach is visually too confusing one may consider drawing a normal vector (in whatever graphical representation) to indicate the orientation?!
