"motorway_link" is not present in the drop-down list of highway types. I draw a lot of ramps, or "motorway links", so having "motorway_link" in the drop-down list would be a big time saver for me. Currently, I have to select "motorway" from the drop-down list, and then go to the tag editor and manually type "_link" after it.

It's a difficult one to call, but I think there's already enough options in that menu and adding more would just clutter it. The presets aren't meant to offer everything - just the most commonly used.
Potlatch 1.0 will probably offer the option for your own customisable preset panels, so you can add motorway_link to your own preferences.
Until then, you might want to investigate the 'Repeat Tags' button (or press "R") - this repeats the tags from the previously selected way. (Shift-R repeats all tags apart from 'ref' and 'name'.) It can make this sort of work much quicker.
